In our Mediterranean diet, we use oil generously. And this high mineral iron pan is perfect for frying, as its walls contain our excesses without splashing the kitchen.
The high iron pan features two stainless steel handles, elegant and sturdy, that allow you to handle it comfortably and safely, both on the stove and in the oven. Thanks to its great height and capacity, it is a very versatile pan in which you can prepare all kinds of dishes:

Yes, with no time limit, because both its handles are stainless steel. So you can do long roasts or gratins without any problem.
2.5 litres for the 24 cm, 4 litres for the 28 cm and 5.5 litres for the 32 cm. The height ranges from 7.8 to 9.6 cm.
Look at the base: 16.5 cm on the 24 cm pan, 19.5 cm on the 28 cm and 22.5 cm on the 32 cm. On induction, choose the base closest to your hob ring, within 1 cm.
Yes. Its high sides make it perfect for frying, and you can leave the oil in it between batches.
Yes, just once, before first use. It leaves the factory with a protective coat of beeswax, and seasoning it with oil starts the patina that will gradually make it non-stick. You'll find the step-by-step in our seasoning and care guide.
Because the non-stick layer builds up with use, not with seasoning. For the first few weeks, heat the pan gradually over a medium heat, use a little more oil and don't move the food until it releases on its own. The more you use it, the better it gets.
Better not. Serve the food when it's done or move it to another dish, especially if it contains tomato, wine, vinegar, lemon or curry-type sauces: acids and moisture attack the patina, can darken the sauce and give it an iron taste.
With water, a little washing-up liquid and a soft sponge; if anything has stuck, you can use a scouring pad without worrying. Dry it straight away and wipe it with a thin layer of oil. It isn't dishwasher safe and shouldn't be left to soak.
Yes, and it's a good sign. The dark, uneven colour is the patina, which improves the non-stick effect and protects it from rust. The blacker it gets, the better it cooks.
1 kg for the 24 cm, 1.8 kg for the 28 cm and 2.3 kg for the 32 cm.
