You will be surprised how easy these delicious almond croissants (or croissants, or croissants filled with almond cream) are to make. How to make almond croissants

Ingredients (for 12 croissants)

  • 2 sheets of puff pastry (quality)
  • 250 g frangipane cream *
  • 1 egg
  • laminated almonds
  • Powdered sugar

*If you want to make them different, you can also fill them with salted caramel or dulce de leche , and arrange a good amount of almonds on top of the croissants. Both salted caramel and dulce de leche go very well with almonds, giving you a great alternative if you have those preserves at home and want to make express croissants at any time.

You can also try them by filling them with the almond cream used to make the frangipane cream (that is, make only half of the proposed frangipane cream).

Preparation

  1. Prepare the frangipane cream, here you will see the step by step recipe for the preparation of the almond cream.
  2. Roll out the puff pastry on a baking tray .
  3. Stretched the dough horizontally, separate the dough into 3 equal parts from top to bottom (as you will see in the photo).
  4. Cut each rectangle obtained triangularly, and make a small cut at the base of each one.
5. Now, with a spoon or spatula, arrange a little frangipane cream in the center of each triangle, and spread the cream over the entire surface. You should not overdo it, or it will stick out when baking.
6. Starting at the wide base of each triangle, where you have made the cut, begin to roll the dough to assemble your croissants. Roll all the croissants.

    7. Brush with beaten egg (go overboard, be generous with that brush to ensure the almonds stick more easily).
    8. Arrange the laminated almonds on top of all the croissants.
    Now you can repeat the process with the second sheet of puff pastry, until you get 8 more croissants.

      9. Bake for about 20 minutes at medium height in the oven, with the oven preheated to 190ºC, or until you see them golden.
      10. Remove from the oven, let cool and sprinkle icing sugar on top.

        Enjoy them still a little hot, they are absolutely delicious croissants!

        Grades

        • For baking, I recommend using a perforated tray or the Nordic Ware Naturels tray, since they allow air to penetrate the dough quickly and the result is great, effective and fast.
        • Apart from the icing sugar, these almond croissants are also delicious if you zigzag a little salted caramel on top. It provides a contrast to the softness of the interior cream. Melted white chooclate also suits them very well (you can dip the tips of the croissants if you prefer them presented that way).
        • Don't walk away from the oven! once they have risen and begin to brown, they take very little time to be completely ready and could easily burn if you get confused.
        • If you want to make large ones instead of small croissants, just cut the puff pastry in half instead of making three parts. Thus, the triangles that you will generate in the next cut will be larger, and the final result too.
