Lemon Yogurt Bundt Cake with Thyme Cheese Glaze
This week Laura, from the gastronomic blog Because , has prepared a delicious Bundt cake for us to surprise friends or enjoy the snack to the fullest!
In just 15 minutes of active time, you can prepare this spongy and aromatic cake to enjoy a great summer snack with family and friends. And what better idea than presenting it in the form of a Bundt cake, which in addition to guaranteeing perfect and uniform cooking, provides an unbeatable presence. Try it, you will love its delicious simplicity and do not forget to accompany it with the cream cheese frosting and thyme leaves, they give it that special touch that makes you repeat!
Ingredients:
1 cup melted butter, plus a little more for greasing the pan
1 cup of sugar
2 eggs
1 cup of creamy yogurt
the juice of two medium lemons
the zest of the skin of a lemon
2 cups of pastry flour
1 packet of royal yeast
For the glaze:
80 gr. icing sugar
50 gr. Philadelphia cream cheese
The juice of half a lemon
thyme leaves to serve
Elaboration:
Mix the butter and sugar well and add the eggs one by one.
Add the juice, zest and yogurt and mix well.
Add the sifted flour mixed with the yeast and mix until obtaining a lump-free dough.
Brush the mold with butter and fill it.
Let it rest for half an hour before putting it in the preheated oven at 180º.
Let it bake for 30-40 minutes, pierce it with a skewer and check that it comes out dry before removing it from the oven.
Let cool on a wire rack and unmold.
Prepare a glaze by mixing the three ingredients. Serve with the glaze on top and a few thyme leaves.
Notes: Measurements are to fill half a Nordic Ware Heritage pan , approximately 1 liter, about 10 servings.

Este molde es genial! se desmolda perfectamente y el resultado de cada bundt cake es realmente espectacular!! Yo acostumbro a hacerlo de chocolate que nos chifla :)
