We start this New Year 2020 with a recipe that's extremely easy and impressive. Corn, cheddar & jalapeño waffles; a recipe that, I tell you now, will become a must-have for your whole family. And to make it even better, I'll tell you we're serving it with a cheddar cheese sauce. Yes, exactly what you're thinking: for dunking the waffle well!

A sweet waffle is always welcome, but it's true you can't overdo them; with these savory ones, I think we can make an exception. Not only can we eat them as a snack, but they're an ideal bread substitute for any meal that requires it. Also, why not, they can make a great breakfast.

Also, I'll tell you something: after cooking them we can freeze them and always have them on hand. You just need to let them thaw at room temperature or, if you're not one to wait a minute… Put them in the toaster like a slice of bread and enjoy.

To make these waffles, I used the Nordic Ware waffle iron, it not only makes great waffles, which it does, but what I like most about it is that it doesn't take up any space — it's like having another pan — and it cleans beautifully.

We can pair these waffles with anything; feel free to experiment with toppings and don't forget to share them with me to give me more ideas.

This recipe is ideal for kids, although if they don't like spicy food or aren't used to its flavor, it's better to omit the jalapeño, which, although not very hot, they might notice. Also, these waffles are gluten-free, so another point in their favor.

Have I already told you it's a very easy recipe? You only need a whisk and a couple of bowls; and if you can get a pair of little hands from the kids in the house involved, the work is more than done. Let's get to the recipe!

Ingredients

For the waffles:

  • 155g corn flour
  • 45g rice flour
  • 30g oat flour
  • 50g sugar
  • 1 tablespoon baking soda
  • 1 tablespoon salt
  • 2 large eggs
  • 250ml milk
  • 60ml melted butter
  • 80gr grated cheddar cheese
  • 1 large jalapeño, chopped

For the cheddar cheese sauce:

  • 250g chopped cheddar cheese
  • 150ml cooking cream
  • 1 tablespoon butter
  • A pinch of salt and pepper
  • 1 pinch of hot paprika (optional)
  • Jalapeños (optional)

Preparation:

  1. In a medium bowl mix the corn flour, rice flour, oat flour, sugar, baking soda and salt.
  2. In another bowl, whisk the eggs and milk until combined. Add the melted butter and mix until combined.
  3. Pour the wet ingredients into the flour mixture and beat until fully combined. Fold in the cheddar cheese and the chopped jalapeño.
  4. Heat the Nordic Ware waffle iron for at least 3 minutes on both sides over medium heat. Grease the waffle iron with oil or melted butter on both plates. Pour about 1/4 cup, roughly 70g of batter, into each section and cook about 1½ minutes per side. To check doneness, open the waffle iron very slowly and verify they're golden. If not, let them cook a little longer.
  5. As they finish, transfer them to a rack until all the batter is used.
  6. Serve immediately while hot with the cheddar cheese sauce.

      Cheddar cheese sauce preparation

      1. In a saucepan over medium heat melt the butter.
      2. Add the cooking cream, salt, pepper and the finely chopped cheese.
      3. Begin melting it while stirring constantly until it reaches the perfect texture. Add the paprika and jalapeños if desired.

      Hola, Isabel y Silvia:
