Last weekend I tried tofu burgers . We love burgers at home; in fact, I have been innovating for quite some time now and preparing them not only with chicken or meat but with various ingredients that I manage to surprise.
It wasn't long ago that I discovered veggie burgers , which are suitable for vegans; they can be made with legumes, such as lentils and chickpeas, but I had always wanted to try them with tofu.
Nowadays it is easy to find it in any supermarket so we have it close at hand. It is true that in this case the Gefu burger press has been of great help, since the mixture needs to be well compacted to achieve good results. Do you fancy trying them?
Today I'm preparing it with the De Buyer French collection cast iron skillet . It couldn't be more French! Let's get to it!
Presentation proposal for tofu burgers and a B De Buyer French Collection mineral iron skillet.
Ingredients
- 300 gr of tofu
- 75 g cooked chickpeas
- 1 onion
- 1 carrot
- 1 clove of garlic
- 2 tablespoons of soy
- 1 tablespoon grated ginger, preferably fresh
- 1 teaspoon cumin
- Breadcrumbs
- Olive oil
Preparation
- First, drain the tofu thoroughly. To do this, place it on the WMF Gourmet stainless steel drainer for approximately one hour. Let it drain the water and help the process by pressing it firmly from time to time with a flat stainless steel spatula .
- We chop the onion and carrot very finely, add a little salt and sauté for half an hour in a frying pan.
- Meanwhile, blend the chickpeas with the garlic and soy sauce.
- Finally, we mix the sautéed vegetables with the chickpea puree and add the crushed tofu (made with a machine or crushed with a fork).
- With the help of the Gefu hamburger press we form the hamburgers.
- We coat them in breadcrumbs and fry them in oil at a medium-high temperature using the B De Buyer mineral cast iron frying pan (I used the version with the French stainless steel handle ) until they seal, taking special care when turning them over.
- We will use a shovel to carry them from one side to the other, the mixture is delicate and can break easily.
Tip: It is important that the dough is well dried and drained, not only the tofu but also the onion and the poached carrot should not add water to the mixture.
