I bring you a breakfast of the Gods, sweet and super deli... And very easy to prepare! At home they'll cheer you, while asking for another. It's a toast with salted caramel and banana, an already winning combination, which we complement with a few more ingredients to make it very attractive to the eye and sweet and delicious in every bite.
Take note! It's a sweet recipe full of energy thanks to the banana, honey and nuts, with no added sugars beyond the salted caramel or chocolate you'll spread on the slice and what you control.
Ingredients
- Bread of your choice (round wheat, spelt, wholemeal, seeded...), 500 gr or 1Kg, per each person's preference.
- Tiptree salted caramel
- Banana at the right ripeness, slightly ripe
- Pecan nuts
- Shredded coconut
- Mild honey

Preparation
- Cut the bread into slices and toast it.
- Spread the toasts with salted caramel.
- Cut the banana into slices or rounds and place it on top of the caramel, covering the bread.
- Roughly chop the nuts, and scatter them over the banana.
- Sprinkle the coconut flakes (amount to taste), or alternatively toasted sliced almonds.
- Pour honey over the top, helping the ingredients stick to the toast and adding its nuances.
- Enjoy!

Notes
- I love toasted bread, but if you have a good country bread and don't want to toast it, it will be great soft as well.
- Pecan nuts are softer and more buttery, but you can use Californis walnuts if you prefer.
- Instead of salted caramel, you can spread the toast with melted chocolate, hazelnut spread or peanut butter. Personally I prefer salted caramel or chocolate, they go amazingly with banana.
- For decoration, you can use coconut flakes, or replace them with hazelnuts or sliced almonds. They pair perfectly with banana and honey, and add the final touch to the dish.
- By personal preference I use a mild honey, usually rosemary or wildflower, or alternatively agave syrup; but in this recipe, if you like strong flavors, an orange or chestnut honey will be great too.
- It's important to serve it right after preparing, or the banana will darken and lose its charm.
- If you don't want to use honey but fancy a sweet and delicious breakfast, you can use candied nuts. It's a great option and each "crunch" tastes like a champion's breakfast. You can see how to make candied nuts in this post.
