Apple pie is a classic, but today I give it an extra touch without adding effort: this apple puff pastry has an extra spice boost and jam in the background that makes it delicious. A perfect recipe for an easy apple tart but a little different from the traditional recipe.

You probably know that a puff pastry tart is a quick and easy way to serve a delicious express breakfast, a coffee-time accompaniment, or a snack. If you're short on time, like I was today, when we had a picnic but no time at all, go for this delicious and easy apple tart with jam and spices. Super tasty and very quick to make!

Recommendations

  • Always keep a sheet of puff pastry or shortcrust pastry in the fridge - it will always save you when you're feeling lazy and don't want complications, when you have little time to prepare something for a picnic, or to make a quick savory tart for a fast dinner.
  • In this apple tart I didn't place anything in order in the fruit slices, which is why I call it the "spiced wild apple tart" (because of that disorder and its rustic, bold touch, thanks to the intense flavor of the spices). But if you prefer those neat, perfectly arranged tarts, it's as easy as laying the apple slices in orderly, overlapping rows, with patience and time. If that's how you like it, I recommend using a kitchen mandoline for perfectly uniform slices.
  • I used rectangular puff pastry, you can make it round as well, or use shortcrust or pie dough, if that's what you have. Success is guaranteed!
  • The ingredient amounts are approximate. Sprinkle the sugars and spices to your taste, but above all be generous, that's the charm of this tart.

Ingredients

  • 1 griddle of puff pastry
  • 3 yellow Golden apples, firm but not green.
  • 3 generous tbsp Raspberry or strawberry jam
  • 4 generous tbsp Brown sugar
  • 4 tbsp Panela
  • 2 tbsp Cinnamon (or to taste)
  • 2 tsp Ginger
  • 1 tsp Nutmeg
  • Juice of half a lemon
  • Egg for brushing

Preparation

  1. Preheat the oven to 190 °C.
  2. Peel and roughly slice the apples (rotate the apple and cut 0.5 cm thick slices lengthwise), and place the apple slices in a large bowl.
  3. Add the juice of half a lemon and mix to coat all the slices.
  4. Pour in 3 tablespoons of brown sugar and the panela. You can also add white sugar or replace all with panela.... Sweeten to your liking, but it's interesting to use a good panela because it adds many nuances. Mix and add a few more tablespoons of sugar and/or panela if you feel it's needed to even things out.
  5. Add 1 tablespoon of cinnamon, the nutmeg and the ginger and mix again, being careful not to break the apple. Set aside.
  6. Spread the puff pastry on a baking sheet Naturals Nordic Ware or a perforated tray.
  7. In a bowl or cup, heat the jam for a few seconds in the microwave, and stir until diluted and liquid. If necessary, add a few drops of water.
  8. With a pastry brush, brush the entire puff pastry with the jam, leaving one finger-width of the edge unbrushed.
  9. Arrange the spiced apple on top, neatly or messily as I did (place the apple how you like, but make sure it's well covered and there are no gaps).
  10. Sprinkle one more tablespoon of panela or brown sugar and one of cinnamon on top.
  11. Brush a little of the remaining jam over the apples.
  12. Gather the edges of the puff pastry inward and prick them with a fork.
  13. Brush the edges with beaten egg.
  14. Place in the oven, middle/high shelf at 180 / 190 °C. In about 25 minutes it will be ready - remove when the pastry is cooked and the apples look soft.
