I can assure you there is no better sandwich than this! It's a Cuban ropa vieja sandwich. Ropa vieja is stewed pork or beef and we'll use it as the sandwich filling. Ropa vieja and a Cuban sandwich, a great combination.
It's a make-use recipe and a great reason to explore all the uses of the WMF multi-function pressure cooker. It's an electric pressure cooker but also a cooking center that lets you make a lot of recipes.
Ingredients
- 1 Kg beef shank (yearling or cow)
- 2 onions
- 4 tomatoes
- 4 crushed garlic cloves
- 2 glasses of red wine
- olive oil
- pepper and salt
- Sliced sandwich bread
- Ropa vieja
- Pickled gherkins
- Cheddar cheese slices
- Mustard sauce
- Butter
Preparation
- Cut the meat into pieces and season with salt and pepper to taste. Put it in a bowl, cover with red wine and marinate for at least 2 hours (leave it marinating outside the fridge).
- Put oil in the electric cooker and set the "Dorar" function. When the oil is very hot, drain and brown the pieces of meat (if you don't have the electric cooker, you can do the same steps in the bottom of a conventional pressure cooker).
- Then brown the onion over low heat until translucent and then add the minced garlic and cook until everything begins to brown.
- Add the chopped tomato and the wine and evaporate the alcohol. Adjust the salt.
- Close the cooker and set pressure cooking, level 4, 45 minutes and natural release.
- Let the program finish and open the lid, let cool, preferably overnight.
- Shred the ropa vieja meat with a fork and set aside. Slice the gherkins thinly.
- Spread the slices of sandwich bread with butter.
- Place a slice of cheese on each slice, put two slices in the WMF sandwich maker, some gherkin slices, a couple of tablespoons of ropa vieja and mustard to taste.
- Top with the buttered slices with the cheese on the inside, close the sandwich maker and turn it on.

Hola. Ya que advertís de cómo dorar la carne si no se tiene una olla eléctrica, favor de indicar el tiempo de cocinado con la olla a presión, en vez de los 45 minutos que indica la receta para la olla multifunción. Gracias
