I bring you some banana pancakes, some pancakes without sugar that are delicious. These pancakes are made from banana (the banana is the ingredient that helps us sweeten the batter and avoid using sugar) and oats, so they are very healthy and very easy and quick to make!

Since I saw them being made I loved the idea of giving that characteristic sweet banana flavor in the pancake batter itself, made also with oats. Healthy and sugar-free, these are pancakes you'll make in no time and with only 3 ingredients. It's truly a delicious breakfast!

I would love for you to discover it, I think it's a great way to make pancakes. For this, you will only need a blender or food processor to make the banana puree and mix it with the flour and eggs, then cook it in the pan. And that's it!

I strongly encourage you to try it at home, and I suggest several toppings to accompany them below.

Ingredients

  • 2 ripe bananas
  • 2 eggs size L
  • 6 tablespoons of rolled oats (or oat flour)
  • (optional) 1 teaspoon of vanilla extract

Preparation

  1. Put the rolled oats in a grinder or food processor (we use the food processor Magimix), and grind until it becomes flour.
  2. Put the bananas in large pieces and the eggs in the processor and grind again until you get a uniform batter, with all the ingredients well integrated. Now you have the pancake batter ready.
  3. Prepare Mineral B iron frying pan Brunchtime or an iron skillet with a thin smear of butter. You can also choose to use a non-stick pan and skip the butter coating.
  4. When the pan is hot, add a ladle of batter and let it cook until you see bubbles on the surface.
  5. Flip the pancake and cook on the other side.
  6. Serve your pancakes with the accompaniment you like best.

Suggestions to accompany your pancakes:

These pancakes are already sweet by themselves thanks to the banana. So you can simply top them with some fresh blackberries and a few fresh blueberries. It's also tangerine season, so you can accompany these pancakes with some segments.

If you want to add a touch more sweetness, drizzle a little agave syrup or honey on top... Or melted chocolate, it really pairs wonderfully with banana.

If you want a more indulgent option, place some chocolate squares between pancakes; you'll see them melt and the flavor is fabulous.

If you prefer to accompany them with savory flavors you can also do that. But better to look for contrast... Jamón iberico, bacon sautéed in the pan, strong cheeses... You will enjoy such combinations too.
