Very quick to make and with a special touch, these roasted carrots with honey and crispy ham are a perfect appetizer or accompaniment to any meat or fish dish. Also accompanied with a little rice, they become a very special and complete first course. Personally, I love to have it with couscous, and as an accompaniment to grilled or baked fish dishes .

The truth is that since I tried it, I fell in love with it for its unique contrast, ease of preparation and its versatility: it is a recipe that turns out well, is healthy and has a different touch without complications, just the way I like it to be cooked. Roasted carrots with honey and ham

Ingredients

  • 24 baby carrots
  • Olive oil
  • Salt
  • Ground black pepper
  • 3 or 4 tbsp honey (mild, rosemary or thousand flowers)
  • 2 tsp fennel seeds, toasted and lightly crushed
  • 140 g ham

Preparation

  1. Clean the carrots with water and place them in a ceramic dish or the Le Creuset iron dish.
  2. In a small bowl, mix 60 ml of EVOO, salt and freshly ground black pepper.
  3. Coat the carrots with the dressing you have prepared: you can pour it over the top and use a cooking brush to ensure that all the carrots are coated.
  4. Pour 4 teaspoons of honey over the top, letting it drip down as you move the spoon over the carrots.
  5. Sprinkle with some toasted and lightly crushed fennel seeds.
  6. Bake in a preheated oven at 180°C for 20 minutes, turning a couple of times (if the carrots are thick, you may need a little more time, although in that case you can also cut them crosswise in half).
  7. Arrange a few slices of ham around the carrots and continue baking for a few more minutes, until the ham is crispy.
  8. Serve hot and enjoy the contrast of flavors!

Grades

  • You can add julienned or chopped onion (spring onions can also be used), it goes wonderfully with both carrot and ham, and with the touch of honey it will caramelize quickly and is delicious.
  • If you're using them to mix with couscous or rice , or want to make a smaller bite to accompany a fish dish, you can slice the carrots . It will only take a minute longer to prepare but you'll get that back in the oven (they'll roast a little quicker).
