Today I suggest a vegetable snack that's easy to prepare and very healthy. These beetroot and sweet potato chips, with the crispiness that dehydration gives them, are a great option to keep hunger at bay at any time of day. A nibble full of flavor —because we add a delicious touch of heat!—, and the nutrients of both tubers, which are wonderfully preserved once ready.
To make these chips, besides the sweet potato and beetroot, you need two more ingredients: time and temperature. To control them as easily as possible, the best option is the WMF food dehydrator. Although there are other ways to make them, such as frying or drying them in the oven, without a doubt using a dehydrator is simpler, more economical and healthier, with the added benefit that you don't have to keep an eye on the process.
When you dehydrate fresh foods, in this case beetroot and sweet potato, you extend their shelf life, preserving all their nutrients while enhancing the flavor, as the water they contain disappears. It's a great way to preserve seasonal mushrooms, aromatic herbs or even cuts of meat, as well as vegetables and fruits.

Ingredients
- 2 whole fresh beetroots
- 1 sweet potato
For the marinade
- Extra virgin olive oil (AOVE) (2-3 tablespoons)
- Ground curry
- Sweet paprika
- Salt
- Pepper
- Cayenne or crushed chili flakes
Preparation
- Mix all the marinade ingredients. Put the amount of each according to your preferences. Add a little more olive oil if necessary.
- Peel the beetroots and the sweet potato, and slice them thinly (about 2-3 mm).
- Spread the marinade over the slices of the tubers and mix well so they absorb it as much as possible.
- Place the slices on the racks of the WMF food dehydrator and set the time (8 minutes) and the temperature (70 °C).
Notes
- As you can see, the recipe is not difficult. And as I always say, feel free to adapt the marinade to your taste with the ingredients you like best. The marinade indicated in the recipe is one option, but if you don't like one of the ingredients you can remove it, or if there's one not indicated that you want to add, it will surely be great as well.
