CLAUDIA'S NOTE ON COLORS: When Emile Henry ceramic is heated, the color of the molds intensifies, becoming darker. Honestly, I never know if I like them better at room temperature or when I take them out of the oven—they are such beautiful colors! The classic red for a while is an intensely garnet shade... I think they want us to keep using them for baking!

Which size should I choose to roast a chicken?
For a normal or large chicken, the 36 x 23 cm or the 42 x 27 cm.
Is it good for roasts?
Yes. As well as lasagnes, gratins or cakes, meat or fish with potatoes come out very well, because ceramic spreads the heat gently and evenly. And it keeps the food warm at the table.

No, this dish does not have a lid.
Can it go in the microwave and the freezer?
Yes. It can go in the oven, the microwave, the freezer and the dishwasher without its properties or colour changing.
How do I stop it breaking?
The only thing ceramic doesn't like is sudden changes in temperature. When you take it out of the oven, set it on a rack, a wooden board or a tea towel rather than a cold surface such as the worktop, and don't put it straight from the freezer into a hot oven. It is also not for use directly on a flame or a hob.
