An essential piece in a professional kitchen , the De Buyer Carbone Plus Lionesa cast iron frying pan is a carbon steel frying pan with which you will cook very efficiently . Thanks to the excellent heat retention and distribution of iron , it is a perfect pan for cooking at high temperatures , sealing food quickly and retaining all its flavor.
Its Lyonnaise design , with a high, flared and curved skirt, without angles, is perfect for speeding up service in a professional environment , as it allows food to slide easily from the pan to the plate or tray.
De Buyer carbon steel (iron) pans are characterized by:
As you can see, apart from their design, the main difference is in the beeswax treatment that is not applied to these pans and that is used in the Mineral B iron pans , specially designed for better use in the home kitchen.
If you purchase the De Buyer Carbone Plus pan for professional use, no seasoning is necessary, as constant and intensive use is sufficient to season it and create the patina that gives it its natural non-stick properties.
If the pan is for domestic use , it is advisable to double season it as follows:
Note: Since the Carbone Plus pan is not treated with natural beeswax from the factory, it may be affected by environmental humidity, causing rust to appear at certain points. This is not a defect of the pan, but is inherent to the material it is made of (almost 100% iron) and can be easily fixed.

Both are iron (99% iron and 1% carbon), with no coating. The Carbone Plus doesn't have the factory beeswax layer and is designed for intensive professional use; the Mineral B does have it and is designed for home kitchens. It's its professional sister: just as good and even tougher.
A shape with high, flared and curved sides, with no angles, that makes food slide easily from the pan onto the plate.
For home use, we recommend a double seasoning before first use: first boil potato peelings in water for 15-20 minutes, then heat oil until it smokes for 5-10 minutes. In professional use, constant use seasons it on its own. You'll find more tips in our seasoning and care guide.
Yes, especially in damp conditions, because it doesn't have the factory wax. It isn't a defect: wash it by hand, dry it straight away and wipe it with a thin layer of oil before putting it away. If a little rust appears, rub it off with kitchen paper and oil.
Look at the base: 12 cm on the 18 cm pan, 14 cm on the 20 cm, 15.5 cm on the 22 cm, 17.5 cm on the 24 cm, 18.5 cm on the 26 cm, 20 cm on the 28 cm, 21.5 cm on the 30 cm, 23 cm on the 32 cm, 26 cm on the 36 cm, 30 cm on the 40 cm and 41 cm on the 50 cm.
Yes, for up to 10 minutes at 200 °C, because of the epoxy resin coating on the handle.
From 890 g for the 18 cm to 6.13 kg for the 50 cm; the 28 cm weighs 2.1 kg. From 32 cm, it has a helper handle.
Because the non-stick layer builds up with use, not with seasoning. For the first few weeks, heat the pan gradually over a medium heat, use a little more oil and don't move the food until it releases on its own. The more you use it, the better it gets.
