Ceramic-coated pans have become very popular: they look great, are lightweight, and are said to be healthier than Teflon. But there is one problem: most of them wear out within a few months. Not because they are poor quality, but because no one teaches us how to use them properly. With a few simple habits, a good ceramic pan can last for years.

What you should know before you start: ceramic is not as durable as cast iron or as nonstick as Teflon. It requires more care, but in return it is a PFAS-free and more sustainable option if properly maintained.

First use

  • Wash it by hand with warm water and mild soap before using it for the first time.

When cooking

  • Heat the pan over low heat and gradually increase the temperature, but never put it on high heat.
  • Always use medium or low heat — ceramic heats up quickly and distributes heat very well. It doesn't need more, and high settings or an open flame damage the surface.
  • Always add a little oil or fat before cooking.
  • Use wooden, silicone, or nylon utensils. Never metal.
  • Do not cut food directly in the pan.

What to avoid

  • Do not use aerosol oil sprays: they leave residue that degrades the coating.
  • Do not cook dry.
  • Do not cook on high heat or overheat the pan, to avoid damaging the ceramic coating or causing food to stick.
  • Avoid thermal shock: never put a hot pan under the tap with cold water.

Cleaning

  • Let it cool completely before washing.
  • Always wash by hand with a soft sponge and mild soap.
  • For stuck-on residue, soak with hot water for a few minutes before scrubbing.
  • Avoid the dishwasher at all costs: long cycles, high temperatures, and harsh detergents wear it down quickly.

Storage

  • Do not stack other pans on top without protection: use a cloth or felt protector between them.
  • Hang it up if possible.

  • If the coating starts to flake, remove it immediately.
