We start this New Year 2020 with a recipe that is as easy and effective as it gets. Corn, cheddar and jalapeño waffles ; a recipe that I can tell you from now on is going to become a must-have for your entire family. And also, to make it even better, I will tell you that we are going to accompany it with a cheddar cheese sauce. Yes, yes, just what you are thinking: To dip the waffle well!

A sweet waffle is always welcome, but it is true that you can't overdo it either; but with these savoury ones, I think we can make an exception. Not only can we eat them as a snack, but they are an ideal substitute for bread for any meal that requires it. Also, why not, they can be a great breakfast.

Also, I'll tell you something: After cooking them, we can freeze them and always have them on hand. You just have to let them defrost at room temperature or, if you're not one of those who wait even a minute... put them in the toaster, like a slice of bread, and enjoy.

To make these waffles, I used the Nordic Ware waffle maker . Not only does it make great waffles, but what I like most about it is that it doesn't take up any space, it's like having an extra frying pan, and on top of that, it's super easy to clean.

These waffles can be served with anything, feel free to experiment with the accompaniments and don't forget to share them with me to give me some more ideas.

This recipe is ideal for children, but if they don't like spicy food or aren't used to its flavor, it's best to omit the jalapeño, which, although it's not spicy at all, they might notice it. Also, these waffles are gluten-free , so that's another point in their favor.

Have I already told you that it's a very easy recipe? You only need a whisk and a couple of bowls; and if you also find a couple of hands for the little ones in the house, the job is more than done. Let's get on with the recipe!

Ingredients

For the waffles:

  • 155g corn flour
  • 45g rice flour
  • 30g of oat flour
  • 50g of sugar
  • 1 tablespoon baking soda
  • 1 tablespoon salt
  • 2 large eggs
  • 250ml of milk
  • 60ml melted butter
  • 80gr grated cheddar cheese
  • 1 large jalapeno, chopped

For the cheddar cheese sauce:

  • 250g chopped cheddar cheese
  • 150ml liquid cream for cooking
  • 1 tablespoon butter
  • A pinch of salt and pepper
  • 1 pinch of hot paprika (optional)
  • Jalapeños (optional)

Preparation:

  1. In a medium bowl, mix the corn flour, rice flour, oat flour, sugar, baking soda and salt.
  2. In another bowl, mix the eggs and milk until combined. Add the melted butter and mix until combined.
  3. Pour the liquid ingredients into the flour mixture and beat until completely combined. Add the cheddar cheese and chopped jalapeño.
  4. Heat the Nordic Ware waffle maker for at least 3 minutes on both sides over medium heat. Grease the waffle maker with oil or melted butter on both sides. Pour about ¼ cup, about 70g, of batter into each one and cook for about 1 ½ minutes on each side. To check that they are done, open the waffle maker very slowly and check that they are golden. If they are not, let them cook a little longer.
  5. Once they are ready, transfer them to a rack until all the dough is covered.
  6. Serve immediately, piping hot, with the cheddar cheese sauce.

      Preparing the cheddar cheese sauce

      1. In a saucepan over medium heat, place the butter until it melts.
      2. We add the cooking cream, salt, pepper and the finely chopped cheese.
      3. We begin to melt it, stirring constantly until it has the perfect texture. We add the paprika and jalapeños if we wish.

      La misma pregunta me hago yo. Si es de la precocida para arepas, o de la amarilla para talos por ejemplo.
      Yo también creo que los haré porque me encantan los gofres y las alternativas al pan y similares.
