If you want do pulled pork at home, I suggest a way to prepare it much easier and faster than you might imagine. Without having to turn on the oven or wait long hours, today I bring you these Pork carnitas in a pressure cooker. At home we've loved them and, although of course it's not the same, with this recipe in a pressure cooker we can do in much less time the filling of the Mexican tacos`, with shredded pork, ` in the style pulled pork.

Prepare the pork loin and cook it in a pressure cooker, such as the Vitavit Premium by Fissler, it will take you very little time. As soon as it's done, since it's a boneless piece, you'll have the shredded pork loin in no time. But the best part is that, having it cooked in the pressure cooker, you will see that the result is much tastier than you imagine.

Today's recipe is a great option for a casual dinner on the weekend. Whether you're at home with the little ones, or meeting up with friends, with these pork carnitas in a pressure cooker you're going to be a hit. As soon as you bring to the table the tray with the pulled pork in the style pulled pork and the plates with the tortillas, the lettuce, the grated cheese and the limes, happiness will take the form of Mexican tacos and the fun will be guaranteed.

Ingredients

For pork carnitas

  • 1,4 kg of pork loin
  • Salt and freshly ground black pepper
  • 1 large onion cut into rings
  • 2 cloves of garlic
  • 1 large can of chopped tomatoes
  • 3 dried red chiles
  • 1 tablespoon of chili powder
  • 1 tablespoon of ground cumin
  • 6-8 sprigs of fresh cilantro
  • 2 tablespoons of red wine vinegar
  • 200 ml of water

At your service

  • 8 medium corn tortillas
  • Julienned romaine lettuce
  • Grated cheese (optional)
  • Fresh cilantro (optional)
  • 2 limes cut into wedges for garnish

Preparation

  1. Clean the pork loin, oil it, and season with salt and freshly ground black pepper.
  2. Heat up your pot Vitavit Premium by Fissler with a little EVOO over medium-high heat.
  3. Sear the meat on all sides until you see it's browned all over. If necessary, add a little extra virgin olive oil.
  4. When the meat is browned, add the onion and the garlic cloves, and stir so they get coated in the juices.
  5. Let them brown a little and add the chopped tomato with its juice, the dried chiles, the cumin and chili powder, the cilantro, and the water.
  6. Put the lid on, close it, and turn up the heat. Set the cooking to level 3.
  7. When you see the yellow ring appear, turn the heat down (roughly set it to medium heat) and wait for the green ring to appear.
  8. As soon as the green ring appears, let it cook for 30 minutes, lowering the heat a bit if necessary.
  9. After 30 minutes have passed, turn off the heat, depressurize the pot, and open it.
  10. Shred the pork loin using two forks. Do it carefully so you don't burn yourself.
  11. Once shredded, return it to the pot and add the vinegar. Season to taste with salt and freshly ground black pepper, and stir everything well so the meat is well coated.
  12. Prepare the tortillas with the meat, lettuce, and cheese, and garnish with a bit of cilantro and a wedge of lime.

    Suggestions

    • On this occasion we made the carnitas with pork loin. Cooked in a pressure cooker, they turn out great and very flavorful. But you can also make them with pork shoulder, which, being a fattier cut, comes out very tender with a more intense flavor.
    • If you're a real "bread lover", you can make sandwiches of pulled pork with molletes or rolls. As good as tacos, you'll see how much they enjoy them at home!
