Since I was little, I remember seeing pocket knives and Pallarès knives at home. My father used the pocket knives in the garden, and I remember my grandfather always carried one in his pocket. When I started helping my mother in the kitchen, I discovered that she also used Pallarès knives for almost everything. Beautiful wooden-handled knives that she still uses and cares for with great affection today.
These knives are handcrafted with iron (carbon steel) and boxwood. Being made of carbon steel, they are more durable and stay sharp longer than stainless steel knives, but it is very important to dry them after use and keep them in a dry environment. Never put them in the dishwasher. We can also apply a drop of oil on the blade if we are going to leave them unused for a while to prevent rust stains. In any case, it is normal for them to darken a bit over time and use, as a natural patina forms, which is part of the charm of these knives.
Pallarès knives are lightweight, balanced, and have a very comfortable handle, so they quickly become one of the most used knives in any kitchen. They are appreciated worldwide as a symbol of a knife with its own character, handcrafted. They can be found in specialty stores across Europe, the United States, and New Zealand, and have appeared in specialized publications for their character and unique design.
NOTE: We are great lovers of Pallarès Solsona kitchen and table pieces. You can find all the pieces from the same collection here, as well as other beautiful Pallarès pieces here.
Yes. Carbon steel develops a dark patina with use, which protects it and is part of the knife's character. Marks on a new knife are usually traces of oil from manufacturing: wipe it with kitchen paper and a few drops of oil and they spread out.
Wash it by hand and dry it straight away, without leaving it in the sink or soaking it. If you won't be using it for a while, spread a drop of oil on the blade. If rust appears, rub it off with a soft scourer and oil.
No, it isn't dishwasher safe: neither the carbon steel blade nor the boxwood handle can take it.
Carbon steel stays sharp longer and is easier to sharpen, but it must always be dried and it changes colour. Stainless steel doesn't rust and needs less care. This boxwood-handled model is only made in carbon steel; the olive wood-handled one comes in both.
The 8, 10 and 12 cm knives are perfect as table, paring or utility knives. The 15 cm and the wide-blade ones (11, 13 and 16 cm) are better for board work, as a filleting or chef's knife.
With a whetstone or a honing steel; carbon steel regains its edge easily.
