Yes, just once, before the first use. It leaves the factory with a protective coat of beeswax; seasoning it with oil starts the patina that gradually makes it non-stick. You can season it on any hob, including induction. You'll find the step-by-step instructions in our seasoning and care guide.
Because seasoning doesn't make it non-stick on its own: the non-stick effect builds up with use. Heat the pan gradually over medium heat, use a little more oil than usual for the first few weeks and don't move the food until it releases by itself. If potatoes stick, rinse them well to remove the starch.
Yes, with water, washing-up liquid and a soft sponge. Dry it straight away and wipe it with a thin layer of oil. For stuck-on residue, rub the pan while it's still warm with salt and kitchen paper. Don't put it in the dishwasher or leave it to soak.
Yes. The Mineral B is suitable for gas, ceramic, induction and the oven. Heat it gradually and choose a size whose base is close to the diameter of your hob ring.
The top diameter. To choose according to your hob, look at the base: 14 cm on the 20 cm pan, 17.5 cm on the 24 cm, 21 cm on the 28 cm, 23 cm on the 32 cm and 26 cm on the 36 cm. From 32 cm it has a helper handle.
They're made of the same material and cared for in the same way. The omelette pan has lower, curved edges so you can slide and flip the omelette or tortilla; you can also make omelettes in the classic pan.
It's carbon steel: 99% iron and 1% carbon, with no coating at all. De Buyer calls its iron pans “acier”; its stainless steel pans carry the word “inox”.
Yes. The dark, uneven colour is the patina, which improves the non-stick effect and protects it from rust. Run your finger over it: if the surface is smooth, it's patina; if you feel bumps, it's burnt oil, and it's best to scrub it off and season the pan again.
Yes, and it isn't a defect: it's uncoated iron. If it's a small spot, rub it with kitchen paper and a few drops of oil. If it's bigger, use a scouring pad, wash the pan, dry it and season it again.
Yes. It's iron with a coat of varnish that insulates a little, but it gets hot during long cooking. Use the De Buyer handle cover or choose the version with a stainless steel handle.
Yes, at up to 200 °C for a maximum of 10 minutes, because of the varnished handle. The version with a stainless steel handle doesn't have this limit.
Sautéing tomatoes or quick cooking, yes. Tomato sauces, wine, vinegar or lemon cooked for a long time, no, because they strip the patina; for that a stainless steel pan is better.
It happens with acidic foods such as tomatoes and with some vegetables such as artichokes or broad beans; it isn't harmful. If it happens with everything you cook, scrub the pan with a scouring pad and season it again.
Yes. It has no coating at all, no PTFE and no PFAS, and it's food-safe. If you want to avoid nickel, it's a good choice: none is added during manufacturing, although it may contain minimal traces.
