One of the great legacies of the Bilbao native María Mestayer de Echagüe has undoubtedly been the book "Enciclopedia Culinaria: La cocina Completa", published by Editorial Espasa.

The author, known under the pseudonym Marquesa de Parabere, is a clear reference when studying early 20th-century Basque cuisine, marking the first steps that lead to what we now consider one of the best cuisines in the world.

María Mestayer was a great enthusiast of gastronomic literature and maintained friendships and correspondence with some of the best chefs of her time. She taught classes at the San Vicente parish in Bilbao and opened the luxury restaurant "El Parabere" in Madrid.

She owes her fame mainly to her written work, particularly the book "La cocina completa," considered by many as the most important recipe book published in Spain, as it exceptionally documents the recipes of the era in Spain and France (her publications show the influence of the classical French school, including personalities such as Auguste Escoffier and Jules Gouffé).

La Cocina Completa is a gem worth studying and savoring. It is one of those few cookbooks considered gastronomic "bibles." Generation after generation, since its publication in 1933, it has been the essential reference book for preparing the most varied recipes.
