Spiced Monkey Bread

Aluminum Anniversary bundt pan Nordic Ware

Ingredients

For the mass:

  • 400 gr of wheat flour
  • 120 g of lukewarm water
  • An envelope of dry yeast (5.5 g) or 15 g of fresh yeast
  • 15g sugar
  • 1 tsp salt
  • 60 g melted butter (which is lukewarm)
  • 75 ml of whole milk at room temperature
  • 1 L beaten egg

To fill and coat:

  • 20 mozzarella balls
  • 50g melted butter
  • 1 tbsp garlic powder
  • grated parmesan cheese
  • Poppy seeds
  • Sesame seeds
  • Rosemary
  • Thyme
  • Oregano

Preparation

Preparation and rising:

  1. In a glass, mix the water together with the yeast and sugar. Stir well until everything dissolves and let it sit for a few minutes until you can see a little foam coming out.
  2. In the mixer bowl, pour the flour and salt.
  3. With the hook and medium-low speed of your KitchenAid robot , go adding the melted butter, milk, egg and yeast mixture that we had reserved . Knead for 5-10 minutes until you get a smooth dough that comes away from the sides of the bowl.
  4. Next, remove the dough from the bowl, shape it into a ball and place it in a large bowl greased with oil. Cover with plastic wrap or a cloth and let rise in a warm place for at least one hour, or until doubled in volume.
  5. Once the time has elapsed, remove the dough and, on a floured surface, degas it and divide the dough into 20 portions.
  6. With each portion, roll into a ball first, then roll each out by hand or with a rolling pin. Inside, put a small ball of mozzarella and close it, as if it were a little bag, and roll so that they are well round. Do the same process with all the balls.
  7. Separately, in a bowl, melt the butter and then add the garlic powder and grated cheese. Stir everything very well.
  8. Grease a Bundt mold with butter or release spray , and preheat the oven to 180º with heat up and down.
  9. Next, pass each ball through the mixture of butter, garlic and cheese and sprinkle randomly with one of the seeds or spices, and place them inside the mold.
  10. Cover with plastic wrap or a cloth and let rise for 30-40 minutes in a warm place.

Baked:

  1. Bake for 35 minutes at 180º or until you can see that the surface is golden.
  2. When it's golden, remove it from the oven and let it cool on a wire rack for about 15 minutes.
  3. With a few taps on the counter you can easily unmold your Monkey Bread and it will be ready to serve.
