This is a bread meant to be pulled apart, eaten piece by piece. In every bite you’ll enjoy its garlic, cheese and spice flavor. Who can resist that?
You may have noticed that we make it, no more nor less, in a Nordic Ware bundt pan. Because besides sweet recipes you can make breads, flans, puddings and so many other delights in a bundt pan!

Aluminum Anniversary bundt pan Nordic Ware
Ingredients
For the dough:
- 400 gr of wheat flour
- 120 g of lukewarm water
- One packet of dry yeast (5.5 g) or 15 g of fresh yeast
- 15 g of sugar
- 1 tsp salt
- 60 g of melted butter (warm)
- 75 ml of whole milk at room temperature
- 1 large egg beaten
For filling and coating:
- 20 little mozzarella balls
- 50 g of melted butter
- 1 tbsp garlic powder
- Grated Parmesan cheese
- Poppy seeds
- Sesame seeds
- Rosemary
- Thyme
- Oregano

Preparation
Proofing and rising:
- In a cup, mix the water together with the yeast and the sugar. Stir well until everything dissolves and let it rest a few minutes until you can see a bit of foam.
- In the bowl of the mixer, pour the flour and the salt.
- With the hook and at medium-low speed of your KitchenAid stand mixer, add the melted butter, the milk, the egg and the yeast mixture we had set aside. Knead about 5–10 minutes until you get a smooth dough that pulls away from the sides of the bowl.
- Next, remove the dough from the bowl, shape it into a ball and place it in a large bowl greased with oil. Cover with plastic wrap or a cloth and let it rise in a warm place for at least one hour, or until it has doubled in volume.
- Once the time has passed, remove the dough and, on a floured surface, deflate it and divide the dough into 20 portions.
- With each portion, first make a ball, then flatten each one with your hand or a rolling pin. Inside, place a little mozzarella ball and close it like a little pouch, rolling so they are nicely round. Repeat the same process with all the little balls.
- Separately, in a bowl, melt the butter and then add the garlic powder and the grated cheese. Mix everything very well.
- Grease a Bundt pan with butter or with baking spray, and preheat the oven to 180º with top and bottom heat.
- Next, pass each ball through the butter, garlic and cheese mixture and sprinkle randomly with some of the seeds or herbs, and place them inside the pan.
- Cover with plastic wrap or a cloth and let rise 30–40 minutes in a warm place.

Baking:
- Bake 35 minutes at 180º or until the surface looks golden.
- When golden, remove from the oven and let cool on a rack for about 15 minutes.
- With a few taps on the countertop you can unmold your Monkey Bread easily and it will be ready to serve.
