If we talk about pancakes the possibilities are endless and if we talk about the dutch
pancakes too.

Normally this is the name given to pancakes that are baked in the oven and in an iron skillet, but we are going to give it a twist and we are going to prepare them individually and in mini cocottes . We will also bake them, but they will be even more beautiful and we will finish them with a rich maple syrup, although of course you can also serve them with cream or ice cream.

Dutch Baby in minicocotte

Ingredients

  • 3 eggs
  • 130 ml of milk
  • 85g flour
  • 1 teaspoon cinnamon
  • A pinch of ground cardamom
  • A pinch of salt
  • 1 tablespoon honey

At your service:

  • A handful of red berries
  • a little maple syrup

Preparation

  1. Preheat the oven to 210 degrees.
  2. Put the eggs in a Le Creuset ceramic tray and beat until foamy.
  3. Add the milk, cinnamon and cardamom, salt, honey and flour and beat again.
  4. Grease some mini Le Creuset cocottes with a little butter. Fill and bake at 200 degrees for about 8 minutes until golden. Depending on the oven, you may need a couple of minutes more or a few less.
  5. Serve immediately with berries and maple syrup.
  6. These pancakes go down shortly after coming out of the oven, so it is worth eating them freshly made, although at home we like them warm and we let them cool down a bit. They go down, but they are just as rich.
