As elegant as the traditional French madeleine, with its soft ribbed texture and delicate shapes, the Madeleine rectangular ceramic mold from Emile Henry is a true beauty. Its generous capacity and its ceramic construction, make it ideal for baking all kinds of batters. Delicate and airy like a sponge cake or pound cake, dense like plum cake or brioche, or sandwich loaves or rustic breads, in this charming mold they will be as beautiful as they are delicious.
The Madeleine mold, like all Emile Henry ceramic pieces, guarantees perfect baking and a wonderful presentation. At a glance, you can appreciate its excellent quality and understand why Emile Henry is such a well-known brand in France.
As you can see, it is not only such a beautiful mold that you can't help but look at it, perfect for baking with excellent results and also for cold and frozen preparations, but it is also natural and healthy.
Wide and deep, it offers generous capacity, perfect for all kinds of recipes. Babkas, sandwich loaves, fragrant brioches, fruity plum cakes or cakes loaded with chocolate, classic sponge cakes or ones adapted to your taste—there is no prettier mold than the Madeleine for bringing them to the table.
CLAUDIA'S NOTE ON THE COLORS: When Emile Henry ceramic is heated, the color of the molds intensifies, becoming darker. The truth is, I personally never know whether I like them more at room temperature or when I take them out of the oven—they're such beautiful colors! The classic red becomes a very intense garnet shade for a while, the blue deepens into a very elegant ocean color... I think they want us to keep using them for baking!
The 2-litre dish measures 29 x 13.5 x 9 cm outside and 28 cm long inside, and weighs 1.26 kg. The 1.1-litre dish measures 24.5 x 11 x 8 cm outside and 23 cm long inside, and weighs 800 g.
Sponge cakes, pound cakes, loaf cakes, brioches, babkas or sandwich loaves. And as ceramic holds the cold, it is also great for ice cream, flans or panna cotta.
Because ceramic spreads the heat gently and gradually, right to the centre of the mixture, and doesn't dry it out like other materials. The same recipe comes out more tender and rises better.
Yes. Its glaze resists cuts and the fluting helps you mark out the portions.
Yes. It withstands -20 °C to 270 °C: it can go in the oven, the microwave, the freezer and the dishwasher without its properties or colour changing.
It is normal: with the heat, the glaze darkens and the colours become more intense. Red turns almost burgundy and blue becomes an elegant ocean shade. As it cools, it returns to its usual colour.
10 years. It is made by hand in Burgundy, France: the same artisan who makes each piece checks and signs it. The ceramic contains no lead, cadmium or nickel.
