The Perforated stainless steel springform pan De Buyer is the first springform pan with integrated hinges. A rectangular pan sturdy, non-deformable, professional quality and made entirely of stainless steel. Its integral design, with pivoting latches, allows it to be easily unfolded without losing any parts. The perforations ensure even baking of the dough, making it excellent for baking everything from sandwich breads to brioches, sweet tarts, or even a pâté en croûte with the characteristic crispy finish.
The perforated stainless steel springform pan belongs to the Geoforme collection by De Buyer and was designed and manufactured in collaboration with Fabien Pairon, Meilleur Ouvrier de France in 2011.
The pan is practical, functional, and efficient. Its design incorporates all the innovations that have made it a next-generation professional tool:
- Thanks to its all stainless steel design it is a sturdy and non-deformable pan.
- Its integral "All-in-One" design features riveted hinges and pivoting latches that allow the pan to be unfolded without losing any parts. The pan is not detachable, it is foldable.
- Its edge is flat, facilitating the work of lining the dough for pâtés en croûte.
- It is easy to use, both to unfold and to fold.
- When unfolded, the pan lies completely flat and serves as a template for the dough, which is especially suitable for pâtés en croûte.
- Air System. The pan’s perforations allow air circulation during baking and provide even baking of the dough. The the result is much crispier on the outside, while the inside remains juicy; the Set is much more flavorful.
- Being foldable, it is easy to line, allowing for more comfortable filling.
- It is a perfect pan not only for pâtés en croûte. You can bake sandwich breads, brioches, traditional rectangular breads, sweet and savory tarts, and even some denser sponge cake doughs using parchment paper.
