What is the Zwilling sous-vide rod

Zwilling's sous-vide cooking wand is an immersion circulator , a small appliance that allows you to cook any vacuum-packed food in a water bath at a precise temperature in a water bath.

It has a cylindrical shape, similar to the body of an arm blender, and is made up of a single piece of :

  • a resistance
  • a thermostat
  • a water circulator
  • A clamp clamp.
The resistance is responsible for heating the water to the temperature indicated on the thermostat, which ranges from 0 °C to 90 ° C. The circulator is a kind of fan that keeps the water in constant motion , ensuring a homogeneous temperature . The clamp allows the rod to be attached to the pot, casserole or pot.

How to cook with the Zwilling sous-vide stirrer

  • Fill the pot with water and place the rod.
  • On the LED screen, set the time from 0 to 99:59 hours and adjust the cooking temperature , from 0 °C to 90 °C . You can do it very precisely , with steps of 0.5 °C and a precision of +/- 0.1 °C - 0.2 °C if cooking is between 40 °C and 70 °C.
  • While the water reaches cooking temperature, place the food and dressings you are going to cook in a vacuum bag (fish with spices, vegetable stew with aromatic herbs, some well-marinated chicken wings, marinated pork ribs, candied artichokes, etc…).
  • Close the bag, seal it with the vacuum pump and place it in the water when it is at the desired cooking temperature.
  • Let it cook for the time you have indicated.
  • When finished, the warning acoustic signal will sound and it will stop automatically.

Once the cooking time has elapsed, you do not have to worry about removing the bag immediately ; Food can remain in the water bath and will not cook beyond the desired doneness. This way you will have total flexibility to decide when you want to cook it and when you want to serve it .

Excelente

Tengo otra, de otra marca. Y, esta es más silenciosa y efectiva. El único pero, es que no viene recomendada la olla perfecta para ella. He visto una tapa aunque no estaba descrito para que diámetro de olla era. Así que me quedé coja en ese aspecto.
