What is the Zwilling sous-vide wand

The Zwilling vacuum cooking wand is an immersion circulator, a small appliance that allows cooking in a water bath, inside a container with water at a precise temperature, any vacuum-sealed food.

It has a cylindrical shape, similar to the body of an immersion blender, and is made in a single piece of:

  • A heating element
  • A thermostat
  • A water circulator
  • A clamp.

The heating element is responsible for heating the water to the temperature set on the thermostat, which ranges from 0 °C to 90 °C. The circulator is a kind of fan that keeps the water moving constantly, ensuring a homogeneous temperature. The clamp allows the wand to be attached to the pot, saucepan, or container.

How to cook with the Zwilling sous-vide wand

  • Fill the pot with water and place the wand.
  • On the LED screen set the time from 0 to 99:59 hours and adjust the cooking temperature, from 0 °C to 90 °C. You can do it very precisely, in 0.5 °C steps and with an accuracy of +/- 0.1 °C - 0.2 °C if cooking is between 40 °C and 70 °C.
  • While the water reaches the cooking temperature, place the food and seasonings you want to cook (fish with spices, vegetable medley with aromatic herbs, well-marinated chicken wings, marinated pork ribs, confit artichokes, etc.) in a vacuum bag.
  • Close the bag, seal it with the vacuum pump, and submerge it in the water once it has reached the desired cooking temperature.
  • Let it cook for the time you set.
  • At the end, an acoustic signal will sound and it will stop automatically.

Once the cooking time has elapsed, you don’t have to worry about removing the bag immediately; the food can remain in the water bath and will not cook beyond the desired doneness. This gives you total flexibility to decide when you want to cook it and when you want to serve it.

When cooking vacuum-sealed foods, all the flavors stay inside the bag and become part of the final result. They don’t evaporate or remain in the water, so every bite is much more intense. And by cooking at the optimal temperature, all nutritional qualities are preserved.
