Book "La Cocina Completa" by Marquesa de Parabere (Spanish version)

One of the great legacies of the Bilbao-born María Mestayer de Echagüe was undoubtedly the book "La Cocina Completa" by Marquesa de Parabere, by Editorial Espasa. 

The author, known under the pseudonym Marquesa de Parabere, is a clear reference when it comes to studying the cuisine of the early 20th century in the Basque Country, when the first steps were taken that led us to what we now consider to be one of the best cuisines in the world.

María Mestayer was a great fan of gastronomic literature and maintained friendships and correspondence with some of the best chefs of her time. He taught in the parish of San Vicente in Bilbao and opened the luxury restaurant "El Parabere" in Madrid. 

He owes his fame mainly to his written work and in particular to the book "La cocina completa", considered by many to be the most important recipe book published in Spain, as it compiles with exceptional rigour the recipes of the period in Spain and France.
