Ingredients

  • 7 medium tomatoes, ripe but firm
  • 3 cloves of garlic
  • 5 tablespoons of roughly grated breadcrumbs
  • 4 tablespoons of chopped fresh parsley
  • 1 teaspoon of dried thyme 
  • 4 tablespoons of extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 level tablespoon of sugar (optional)

Preparation

  1. Preheat the oven to 190º C.
  2. Wash the tomatoes and cut off the tops. 
  3. Put two tablespoons of oil in your low casserole type Shallow Casserole Evolution Le Creuset and place the tomatoes upside down, with the cut side in contact with the oil. If you want, you can add a little sugar to encourage caramelization. 
  4. Cook over medium heat until they start to soften and caramelize, about 10 minutes. They should be slightly softened, but not falling apart. 
  5. Turn off the heat and turn the tomatoes over. Set aside.
  6. In a bowl, add the breadcrumbs, chopped parsley, dried thyme, salt to taste, the remaining two tablespoons of oil, and the grated garlic cloves. Stir to mix the ingredients well.
  7. Spread this mixture over the tomatoes and put the Shallow Casserole in the oven without covering it. Cook for about 15-20 minutes, until the tomatoes are tender and the mixture has formed a golden crust.  
  8. When they are ready, remove from the oven and let rest for a few minutes. Season to taste with a little salt and freshly ground black pepper before serving.
