The Carbone Plus De Buyer Iron Crepe Pan is a piece that cannot be missing in a professional kitchen. This low-walled griddle is a carbon steel crepe pan perfect for preparing all kinds of crepes, omelets, or pancakes in the most efficient and fastest way. Its iron construction provides excellent heat retention and distribution, allowing cooking at high temperatures with lower energy consumption.

Its large surface makes it ideal for use as a griddle and low skirt make it very easy to flip crepes and also serve them on the plate or tray.

De Buyer carbon steel (iron) crepe pans are characterized by:

What is the difference between the Mineral B crepe pans and the Carbone Plus De Buyer

  • The Carbone Plus crepe pans are not treated with natural beeswax, so they come from the factory without the protective layer until they are received. The Mineral B crepe pans do receive this treatment (a layer of beeswax is applied to the Mineral in the factory).
  • The Carbone Plus iron crepe pans are pieces for professional and very intensive use. Being used constantly, that use is enough to season them naturally and in a very short time.
  • They are designed to speed up and facilitate work when cooking and plating, during services in professional kitchens.

As you can see, besides their design, the main difference lies in the beeswax treatment that is not applied to these crepe pans but is applied to the Mineral B iron crepe pans, specially designed for better use in home kitchens.

How to season your Carbone Plus De Buyer crepe pan

If you acquire the Carbone Plus De Buyer crepe pan for professional use, no seasoning is necessary, as constant and intensive use is enough to season it and create the patina that gives it its natural non-stick quality.

If the crepe pan is for domestic use, it is recommended to season it as follows, since it does not have enough height to do a first seasoning by boiling water with potato skins:

  1. Wash the crepe pan gently with a soft sponge and a little soap, and dry it well.
  2. Put 0.5-1 cm of vegetable oil in the crepe pan and heat it over medium heat until very hot, until it smokes, and leave it on the heat for about 5-10 minutes.
  3. When ready, remove the crepe pan from the heat and discard the oil.
  4. Carefully, without burning yourself, spread the oil left in the pan over the entire interior surface, so that a thin layer remains (no drops or drips).
  5. Put the crepe pan back on medium heat for another 5-10 minutes.
  6. Remove the crepe pan from the heat and let it cool before storing.

Note: Since it does not have the factory treatment with natural beeswax, the Carbone Plus pan may be affected by ambient humidity, showing rust in some spots. This is not a defect of the pan but something inherent to the material it is made of (almost 100% iron) and can be easily fixed.

Important things to know about Carbone Plus De Buyer crepe pans

  • De Buyer crepe pans are made in France, and the only ones with a certificate of iron purity over 99%. The best!
  • They are iron crepe pans, so they can rust. How to avoid it? Avoid prolonged contact with water, do not let them air dry: simply dry them with a cloth after washing. If you want, you can leave them on low heat for a few minutes again to remove all moisture while finishing cooking (a very easy and useful trick).
  • Apply a little oil and spread it over the surface with a paper towel, but it is not essential.
  • If you are not yet a professional chef, before first use, it is very useful to season them (instructions above).
  • You have a crepe pan for life! You can scrub it with a soft sponge or use steel wool if needed to remove stuck food, nothing will happen to the pan! (there is no non-stick coating to damage). They can turn black, evenly or in patches. Don’t worry, the blacker they get, the better they will perform.
  • If rust spots appear, wipe with a paper towel with oil, and you will see how it disappears like magic. If the rusted area is larger, use steel wool without fear. Nothing will happen; it is a completely iron crepe pan: under the iron layer, there is more iron.
  • If you have had to scrub it with steel wool or just want to, you can season it again, but it is not at all necessary to do it regularly.
