The cookbook "Cooking with a Pressure Cooker", we have created it at Claudia&Julia and under the Cúpula publishing house (Grupo Planeta), with the intention of showing how to make the most of pressure cookers, learning to cook with them through a variety of traditional Spanish cuisine recipes.
The book has been lovingly crafted by Claudia Ferrer (Claudia&Julia) and Leti Iglesias (Revelando Sabores). In the first part of the book, we help you understand how a pressure cooker works, its benefits, and, very importantly, what to keep in mind to adapt any of your usual recipes to the pressure cooker.
Next, you'll find plenty of recipes made in a pressure cooker, with clear and detailed step-by-step instructions so you can cook a wide variety of dishes in record time, including starters (legumes, soups, vegetables, rice, pasta, ...), as well as main courses (various meats and fish) and desserts (from rice pudding to a delicious cheesecake).
It also includes guidelines to keep in mind for steaming, and you'll also find in the book a variety of recipes to make steamed in a pressure cooker.
From garlic soup to oxtail, including pea cream, garlic-style broccoli, Zamoran rice, octopus with potatoes, rosemary rabbit, Galician-style hake, or some delicious custards... And so on up to 49. With this book, you'll lose your fear of cooking with a pressure cooker, learn how to adapt your recipes to it, and prepare dishes that will be absolutely delicious.
In addition, the book includes a foreword by the renowned chef Dolorss Mateu, to whom we are extremely grateful for supporting the project and pressure cooker cooking.

This book was created so you can prepare recipes from our traditional cuisine in record time, and learn to adapt your own recipes to this great kitchen tool.
Once you learn to use a pressure cooker, you can do without almost any other kitchen utensil! We wanted to help you understand all the possibilities of the pressure cooker, understand how it works, have many staple recipes to make in just a few minutes, and thus learn to adapt your own recipes to use it in your daily life.
We believe there is a big lack of information about how to make the most of a pressure cooker. Many times, the pressure cooker is simply associated with cooking soups and vegetables, but far from that, the pressure cooker is a tool with which you can cook everything from rice, pasta, meats, and fish to all kinds of desserts, as well as legumes, creams, stews... and even steamed cakes.
That's the idea! We have developed, tested, and retested all the recipes in the book with the same pressure cooker to have all the times standardized. From there, we have included in the book some guidelines to adapt recipes both from a traditional pot to a pressure cooker and from a pressure cooker to a super-fast cooker.
NOTE: All the recipes have been made in the Perfect WMF pot, as it is a super-fast cooker and one of the best-selling in all of Europe. If you have that or any other super-fast cooker, you shouldn't need to change the times indicated in the book. If you have a standard pressure cooker, you will need to increase the cooking times by a few minutes, and I explain this in the book.

Hacia tiempo que buscaba un libro de recetas de olla expres , lo estoy leyendo poco a poco porque la primera ojeada me ha encantado, y ahora por eso voy poco a poco , lo recomiendo me ha traído recuerdos de mi mamá ella utilizaba mucho la olla a presion , y yo con 62 años voy hacer muchas cosas mas a parte de las verduras gracias por este libro
