Depending on the result you want to achieve when cooking, you can use the cold or hot press:

• The hot press allows you to reduce cooking time and also brown food on both sides at the same time, preventing warping and uneven cooking . Simply heat the press in the oven, on the stove, barbecue or grill. When hot, place it on the food and keep the press flat. This will ensure that both sides of the chicken, steak, sandwich or burger are cooked and browned evenly. If you want the food to release juices, you can press it down a little with the press. The more you press, the faster it will cook. When it is browned to your liking, simply remove the press to serve the cooked item.
  
• Cold press is ideal if you just want completely smooth results and want to have complete control over the cooking time . It's a perfect way to get those crispy, flat slices of bacon that will make you sigh.
