This conical saucepan is specially designed for cooking in a bain-marie , thanks to its shape and construction: its shape is perfect to be placed in suspension inside another saucepan or pot, while it is made of thin walls so that the heat of the surrounding water takes effect quickly to undo whatever you have put in to undo.
