NOTE: Cooking on an iron griddle has nothing to do with cooking on a non-stick griddle: iron gets much hotter (much higher temperature) and seals the food, retaining all the flavor (and evaporating the juices, thus preventing the meat from boiling...). On an iron griddle the meat is roasted!
And you know what? If you purchase a griddle that is 100% iron, like the rectangular or round ones without a handle, they are pieces suitable for the oven (they are purely iron!!), so you can make spectacular pizzas on them, a piece of meat or fish directly from the oven, use it to make a cookie or puff pastry or breeze, make cookies... You have an amazing iron surface for baking!
