The De Buyer Carbone Plus oval cast iron frying pan is a unique piece, essential in a professional kitchen for its design and functionality. Its wide oval surface allows for cooking generous portions and the location of the front handle makes it an indispensable piece for use in salamanders . Thanks to the excellent heat retention and distribution of iron , it is a Perfect pan for cooking at high temperatures with great efficiency, sealing food quickly and retaining all its flavor.
Its 36 cm length , oval design and the greater height of its straight walls provide an ideal surface for cooking both larger portions and larger or whole pieces of meat or fish. The firmly riveted handle allows for comfortable handling, especially when placing it in the salamander for browning or gratinating.

As you can see, apart from their design, the main difference is in the beeswax treatment that is not applied to these pans and that is used in the Mineral B iron pans , specially designed for better use in the home kitchen.
If you purchase the De Buyer Carbone Plus oval frying pan for professional use, no seasoning is necessary, as constant and intensive use is sufficient to season it and create the patina that gives it its natural non-stick properties.
If the pan is for domestic use , it is advisable to double season it as follows:
Note: Since the Carbone Plus pan is not treated with natural beeswax from the factory, it may be affected by environmental humidity, causing rust to appear at certain points. This is not a defect of the pan, but is inherent to the material it is made of (almost 100% iron) and can be easily fixed.

Estoy encantado con mi nueva línea de sartenes y ollas de hierro, tanto carbono como mineral, en este caso, es una sartén ideal para cocinar pescados abiertos y acabarlos desglasándolos con alguna salsita, o para hacer piezas enteras de carne, tipo solomillo entero para después filetear, y lo mismo, acabar con alguna salsita desglasando. Los desglasados limpian los fondos y consigues sabores como los de antes. A disfrutarla!
