Things to Know About De Buyer Mineral B Iron Pans
  • De Buyer pans are made in France, and they are the only ones with a purity certificate of over 99% iron. The best!
  • They are iron pans, so they can rust. How to prevent it? Avoid prolonged contact with water, don't let them air dry: simply dry them with a cloth after washing. If you want, you can leave them on low heat for a few minutes again to completely remove the moisture while finishing cooking (it's a very easy trick to follow and very useful).
  • If you're going to leave them unused for many days, you can apply a little oil and spread it over the surface with a paper towel, but it's not essential.
  • Before the first use, it's very interesting to season them. This seasoning makes them more naturally non-stick. Seasoning is super simple to do. Watch the video among the photos to learn how to do it.
  • You have a pan for a lifetime! You can scrub it with a soft sponge, or wash it with soap if needed to remove food, and nothing will happen to the pan! (there's no non-stick coating to damage). They can turn black, uniformly or in patches. Don't worry, the blacker they get, the better they will perform.
  • If rust spots appear, rub with a paper towel with oil, and you'll see how it magically disappears. If the rusted area is larger, use soap without fear. Nothing will happen; it's a completely iron pan: under the iron layer, there's more iron.
  • If you've had to scrub it with soap or if you simply feel like it, you can season it again, but it's not essential to do it regularly.

Una sartén buena, pero no era lo esperado,se queda negra después de usarla unos días.

En cuanto a lo que nos indicas, con su uso irás viendo que, poco a poco, va oscureciendo, debido a que va creando una capa de antiadherente natural. Esta capa de antiadherencia forma parte del proceso de maduración de las sartenes y paelleras de hierro.

Novata con sartén de hierro

Es la primera vez que tengo una sartén de hierro mineral B. O lo que los ingleses llaman Carbon Steel. Quería una sartén antiadherente que no tuviese teflon. Me gusta el diseño, el peso es manejable para el tamaño que he cogido. Vi cómo curarla en el video de De Buyer en la web de Claudia & Julia, y también en internet. Tengo vitro. Mi recomendación, olvidarse de lo que dice De Buyer. Fregarla con agua caliente y jabón, si. Pero luego te dicen que pongas aceite como si fueses a hacer un sofrito, y si haces eso y la tienes mucho rato al fuego, se crean "lamparones" que se solidifican. Mejor seguir este vídeo: https://youtu.be/eDKZp685Je4?si=8xuWIHZdxZ8wzDxG. Como yo ya la había "curado", opté por fregarla bien y quitar los lamparones. Luego (y lo repito siempre que la uso) cojo un papel de cocina, lo mojo con aceite y le doy al interior de la sartén de manera que si has puesto como para que gotee, coges un papel limpio y lo frotas por toda la sartén para evitarlo. La pongo en la vitro y la dejo al 1 durante un buen rato, como que casi se me olvida quitarla. Y de momento muy bien. He hecho filetes y han quedado super ricos y no se han pegado. Puerro y cebolla sofritos sin problema. Y hoy una tortilla que ha salido bien, pero me falta todavía un poco más de curado en los laterales de la sartén.
Quizás un 4 es poco y si la supiese usar mejor ya sería un 5. De momento me gusta mucho y voy a seguir trabajando en ella y con ella. Si eres de las que quieres sartenes relumbrantes, fregar y listo, compra una de acero inoxidable.
