How to Season Your Carbone Plus De Buyer Paella Pan

Before using your Carbone Plus paella pan for the first time, it is advisable to double season it as follows:

  1. Gently wash the pan with a soft sponge and a bit of soap, and dry it well.
  2. Place a generous amount of potato peels in the pan and cover them with water.
  3. Turn on the heat to medium power and let the water boil for about 15-20 minutes. This will provide the organic component that it lacks since it doesn't have a beeswax treatment.
  4. Carefully remove the potato skins and the water; clean the pan with water and dry it well.
  5. Put vegetable oil in the pan and heat it over medium heat until it is very hot, until it smokes, and leave it on the heat for about 5-10 minutes.
  6. When it's done, take the pan off the heat and remove the oil.
  7. Carefully, to avoid burning yourself, spread the remaining oil in the pan over the entire interior surface to prevent it from rusting.

  3. They are built to last. They will last you a lifetime if you take good care of them.

Note: For cooking and resting the rice, you can use the universal stainless steel lids for De Buyer pans or the stainless steel lids from ILSA. In both cases, they are available in different sizes.
