• Important: When taking it out of the oven, the mould is very hot and you must avoid a sudden contrast in temperature: place it on a cooling rack, a wooden board or a cloth so that it does not suffer a temperature shock, as it could crack.

CLAUDIA'S NOTE ON COLOURS: When Emile Henry ceramics are heated, the colour of the moulds intensifies, becoming darker. Personally, I never know if I like them better when they are at room temperature or when I take them out of the oven, since they are such beautiful colours! The classic red turns a very intense maroon for a while. I guess they don't want us to stop baking with them!
