Miyabi kitchen knives are manufactured according to traditional Japanese criteria, following the lines of contemporary Japanese design (purity, grace and elegance) under strict quality controls.
More than 100 steps and 42 days are needed to craft a knife worthy of the MIYABI brand. Each knife passes through the hands of skilled craftsmen to ensure the highest caliber. We manufacture the knives in Seki, the Japanese capital of samurai sword manufacturing since the 14th century. You get the best of both worlds: German engineering and Japanese craftsmanship, providing great durability and scalpel-like sharpness.
Japanese cuisine places great importance on a good cut to maintain the flavor and texture of delicate preparations like sashimi. In addition to their incredible double edge, Miyabi knives are globally renowned for their exceptional weight distribution and the comfort of their handles.

The blade core is made of MicroCarbide MC63 steel, surrounded by 100 layers of two different types of stainless steel, creating a unique design in each knife. The blade is cold-hardened at -196ºC to achieve an extreme hardness of 63 Rockwell for a flexible and robust knife with a long-lasting sharpness.
The handle, made of birch wood, offers a beautiful contrast to the shine of the steel and the structure of the wood is different for each knife, so each piece is unique. The shape of the handle retains the traditional Japanese "D" shape to ensure an extremely comfortable and secure grip.

Es una maravilla de herramienta, no solamente por su utilidad si no también por que es una pieza de una gran belleza, para filetear pescado es la herramienta ideal, aunque corta tan bien, que lo estoy usando para todo.
Excelente cuchillo, estéticamente impresionante, con un corte preciso y duradero. No es barato, pero vale cada euro que cuesta. Dudaba con los diferentes tamaños que tienen, me asesoraron bien, y creo que para el uso que le daré, es el tamaño perfecto. Lo usaré fundamentalmente para cortar chuletas. Estoy encantado con él.
Compré este cuchillo para un regalo y fue todo un acierto, le encantó al verlo y me consta que mucho más al probarlo. Envío rápido y eficaz como siempre.
