How to sharpen your knife with the Tormek T-1

In just three simple steps, you can sharpen your kitchen knives at home with the Tormek T-1 and achieve professional results. No need for honing rods or manual whetstones—just care for your knives as they deserve:

  1. Adjust: First, adjust the sharpening angle. If you’re not sure what’s optimal, set it to 15º or 17º—both are great starting points. A smaller angle gives better cutting performance, while a larger one offers a stronger edge. For example, a meat knife needs a larger angle than a filleting or paring knife.
  2. Sharpen: Turn on the switch, insert the knife into the guide clamp and gently lower it onto the sharpening wheel. Move the knife back and forth along the diamond disc, following the edge from heel to tip. Keep a steady rhythm, apply light pressure (as if slicing a tomato), and guide the knife so it maintains full contact with the wheel. Flip the knife and sharpen the other side in the same way. Don’t worry about the metal shavings—there’s a magnet in the guide to catch them and keep the wheel clean.
  3. Hone: The final step is honing the knife. Sharpening creates a burr on the edge, which should be removed on the honing wheel to achieve a razor-sharp, durable finish. Ensure the honing wheel rotates in the opposite direction of the edge and move the knife back and forth with light pressure. Flip the knife and do the same on the other side. A couple of passes on each side is enough. Done! Your knife is as good as new—razor sharp and ready to cut.

  • The fine diamond wheel sharpens all types of steel and can also sharpen ceramic knives. Since you sharpen each bevel separately, you can set different angles on each side or sharpen just one side. Ideal for even your most refined knives.
  • It includes a composite honing wheel with integrated polishing compound. This is the final step in the sharpening process. The honing wheel also rotates at low speed, removing the burr and polishing the edge to perfection. For an extra glossy finish, slightly moisten the wheel.
