The De Buyer silicone baking mat is just like the baking paper you already know, but non-stick and reusable. That’s right! You’ll be using it constantly: it’s a truly multifunctional mat on both of its surfaces—smooth or perforated. You can use it as a base for baking your pastry creations, among many other things.

Besides being a baking paper replacement, its excellent non-stick properties make it perfect as a surface to cool down cookies in the fridge before baking, to freeze or deep-freeze truffles, or as a work mat for fondant, sugar paste, panellets or marzipan figurines. These non-stick sheets, also known as silpats, are so revolutionary that they’ll become an essential part of your kitchen, letting you ditch disposable baking paper for good.
