The De Buyer Perforated Square Pastry Frame is a stainless steel mold, ideal for baking your cakes, tartlets, or quiches with a perfect finish thanks to its perforations, which provide even heat distribution.

Developed in collaboration with the Ecole du Grand Chocolat Valrhona, the perforated frame is perfect for baking shortcrust, sablee, puff pastry, or pie dough, achieving a crispy and even result in less time.

Its easy release, as well as its flexibility and durability, make it ideal for intensive use. Choose the shape and size you like best and create your desserts. Individual tartlets, mini quiches, or square cakes, even cold mousses or perfectly plated dishes—you'll surely want them all!

The perforated frame is available in two formats:

  • Square smooth 20 cm x 20 cm and 2 cm high
  • Square fluted 23 cm x 23 cm x 3 cm high
