With all the virtues of cast iron and an impressive design, the Lodge iron griddle pan is a deep frying pan with two handles with which you will cook wonderfully. Its greater height, its two wide handles, and its excellent heat retention and distribution make this piece a Shallow Casserole perfect for frying, sautéing, browning, stewing, baking, or roasting for all kinds of dishes, with finger-licking results.

The high walls make it ideal for frying, as it prevents splashes and, being made of iron, fried foods turn out very crispy. That greater height provides it with a generous capacity, making it a great option for preparing any recipe, from a stir-fry or a stew on the stove, to a low-temperature braise in the oven, a loaf on the barbecue, or some migas on the campfire. The two handles make it easy to handle and will allow you to move it easily from the stove to the oven or comfortably carry it from the oven to the table.

Note: You will notice in the photos that depending on the size, it offers a pouring spout (in the intermediate sizes), or has smooth walls (the 20 and 43 cm sizes). This is not a mistake... maybe a designer's whim... or that the original molds in those sizes each have their own peculiarity.

  • Its factory seasoning or curing. All Lodge cast iron pieces receive factory seasoning or conditioning, so that when you receive them at home they are ready to use. The seasoning of cast iron, called polymerization, consists of applying a layer of vegetable oil to the piece and heating it in the oven at a high enough temperature for the oil to bond with the iron. This process gives Lodge cookware its classic black patina, creating a with a naturally non-stick cooking surface, which is also a protective layer that helps prevent the utensils from rusting.
  • Its excellent non-stick properties. Lodge pieces offer a natural non-stick surface, allowing you to cook with almost no oil. Also, the more they are used, the more non-stick they become.
  • Its quick heating and heat retention. Being iron, it heats quickly and the thickness of its body maintains heat evenly for longer. This allows sealing foods with their own juices, preserving all their flavor. The result is much tastier, like traditional flavors.
  • Its versatility. The pan is suitable for all types of stoves and heat sources. You can cook with it on gas, ceramic, electric, induction, wood stove, barbecue, fireplace, and also in the oven or over a campfire flame.
  • The more than 125 years of Lodge's experience in manufacturing cast iron pieces. Manufacturers since 1896, Lodge is an iconic brand not only in the USA, its country of origin where they still manufacture all their cast iron products at the Lodge foundries in South Pittsburg, Tennessee.

IMPORTANT! As you may have guessed after seeing the production process, the pans are NOT perfect: they have small imperfections that are quite common, usually related to some irregularity in the cast iron. This is normal and nothing to worry about (if there isn't one small imperfection, there will be another). It's part of their process and charm, and you can rest assured because the important thing is that the seasoning has been done throughout the pan.

 

When you want to use it, just let it heat gradually, so the heat distributes evenly throughout the piece, and start cooking when it is very hot. To clean it, let it cool first; wash it with a sponge and non-abrasive detergent and lightly oil the interior surface to prevent rust. For optimal preservation, it is recommended to always store it in a dry place.

Remember that the pan is made of iron and manufactured in a single piece, so the handles get hot. With the silicone handle protectors for Lodge pans, you can handle it safely without burning yourself.

IMPORTANT NOTE:

Lodge iron pieces are heavy, and are not dishwasher safe. The good thing (besides being incredible and natural pans) is that they come factory seasoned, so you can start using them as soon as you receive them (no prior seasoning required). But remember: they are iron cast iron but not enameled, so you must dry them immediately after washing, or rust will appear. If rust appears, simply scrub it off with steel wool to restore it. If you want, you can season it occasionally... Although you are doing it with every use! Use it daily, dry it immediately, and you will have a pan for life (and incredibly tasty recipes with natural flavors).

NOTE: Factory seasoning gives Lodge cast iron pieces a rustic finish with some imperfections, such as some brown marks on the edge, handle, or grip. Don't worry! These are small spots where the oil has not integrated into the iron, but you can use your piece without problems. It is not a defect nor rust and disappears with regular use and care.
