The De Buyer stainless steel chinois strainer is an extremely effective helper. Perfect for use in the kitchen, this cone-shaped "chinois" strainer is ideal for making sauce and soup stocks, for straining all kinds of broths, especially fish broth, or for achieving a very fine and smooth texture, without lumps, in your vegetable purées or in both sweet and savory coulis and creams. Made of stainless steel, its finely perforated walls allow liquid to pass through without leaving any trace of impurities or solids.

The use of the chinois strainer is perfectly complemented by the beechwood pestle from De Buyer. This pusher, with a conical design, is what allows you to move the food inside the chinois strainer, reaching the bottom, so nothing is lost. It is a perfect aid to press the contents to extract every last drop of juice, achieving maximum yield and flavor.

The strainer is entirely made of 18/8 stainless steel, for intensive use and has great resistance to deformation. The arrangement of the 1.5 mm diameter perforations is designed to deliver the best results, ensuring maximum filtering efficiency.

The welded handle is made of stainless steel and provides an ergonomic grip, making it easy to use and handle. At the end, it has a hole for hanging storage, freeing up space in drawers or cabinets.

At the end, the strainer features a hook that allows it to be placed very stably on any container, preventing spills. Additionally, it facilitates use without having to hold it, so you will have your hands free to pour the liquid into the strainer and use the wooden pestle to stir and press the contents easily.

How to use the chinois strainer

  1. Place the strainer over a container, making sure it is tall enough for the strainer to fit and remain stable.
  2. If you want to strain a fish broth, for example, slowly pour both the liquid and the fish, shellfish, and vegetable remnants used to make the broth. The liquid will filter through easily, falling into the container.
  3. Use the wooden pestle to press the remnants. Ideally, move it in circles, pressing against the walls of the strainer. This way you can completely extract the broth and juices from fish and vegetables, without letting solid remnants or impurities fall into the container.
  4. Once all the liquid has passed through, remove the remnants left in the strainer and wash it by hand or in the dishwasher.
