As many of us are already on holiday, I wanted to prepare a recipe that is free of any complications, but with the guarantee that its Basque origin provides us, as this is the time to enjoy the things that we cannot do the rest of the year, to travel, to go out into the countryside with the children, to splash around in the sea or the pool, to go for a walk, to share with friends or simply to let ourselves be carried away by the pleasure of dolcefarniente .

But that doesn't mean we should give up eating healthy and tasty foods. We are in the middle of the oily fish season and we must not forget that it provides us with a host of health benefits, since it contains Omega 3 and helps us regulate blood pressure, which in turn reduces the risk of heart attacks. Furthermore, consuming it rationally has beneficial effects on the circulatory system and prevents arthritis.

For these reasons, I encourage you to eat oily fish, including anchovies, which are delicious in any way and can be served as a main dish, or as a starter or tapa with a slice of bread and a nice, chilled white wine.

Ingredients

  • 500 gr of fat anchovies from the Cantabrian Sea
  • 200 gr of fresh shrimp
  • 3 cloves of garlic
  • A chilli pepper
  • Parsley
  • Extra virgin olive oil
  • Splash of vinegar
  • Salt
  • Toast

Elaboration

  1. We wash the anchovies very well, remove the head and guts, dry them and place them on a tray. Add salt. We heat the oven to 180º and put the anchovies in. We bake for about 5 minutes or until we see that they are cooked. We take them out and set them aside.
  2. While we cover the bottom of a frying pan with a splash of extra virgin olive oil, we add the garlic, and when it starts to dance, we add the prawns and the chilli rings.
  3. Cook for a couple of minutes, remove from heat and add the vinegar and chopped parsley. Pour over the reserved anchovies. Serve immediately, accompanied by toasted bread.
