Waffles with peanut butter
Nothing like dawn to the smell of freshly made waffles. Making waffles is like making pancakes, you can never make enough and if they have a different flavor on top of that, then it is one of the best ways to start the day, although I will tell you that at home they like them just the same in the morning as in the afternoon.
These today are made with peanut butter . Preparing the cream is the first thing we must do. It takes 5 minutes and is much richer than the peanut butter that is bought ready-made and, like everything that is made at home, it has the charm of being made with love.
KitchenAid Stand Mixer and Nordic Ware Waffle Maker
For the peanut butter:
- 200 g of raw peanuts – experience has taught me that the fried ones are not worth it, nor do I end up liking the roasted ones. It is best to buy them with a hard shell and peel them at home.
- A pinch of salt
- 1 to 2 tablespoons vegetable oil
- Half tablespoon of pure vanilla extract
- 1 or 2 tablespoons of maple syrup
For the waffles (9 units):
- 240 grams of milk
- 70 g of sunflower oil
- 65g peanut butter
- 2 tablespoons brown sugar
- ½ teaspoon pure vanilla extract
- 125g flour
- 2 teaspoons baking powder
- 1 egg
- ¼ teaspoon salt
For the peanut butter
- Peel the peanuts, also removing the red skin they have (to do this, once the shell is removed you can put them in a closed jar and make them dance up and down, and that thin red skin jumps easily). Put them on a baking tray and toast them at 160 degrees for about 5 minutes. Let them cool.
- Pass the peanuts to a mincer (either electric or manual ) and crush them for 1 minute. If we want to find small pieces of peanuts in our butter, it is time to take out 1 tablespoon of crushed peanuts.
- Scrape down the sides of the bowl and bottom and blend for another minute. Stop again to repeat the process of scraping down the sides and bottom of the bowl. Blend for another minute.
- Add the salt, oil and maple syrup with the vanilla. Blend until the mixture becomes completely smooth. At this point it should be a spreadable cream. How smooth the butter is and how long you need it will depend on the power of the motor of our food processor. Transfer the peanut butter to a jar.
To make the waffle batter
- In a large bowl, mix the milk, 55 g of sunflower oil, peanut butter, brown sugar and vanilla.
- In a medium bowl, sift together the flour, baking powder, egg, and salt. Add the flour mixture to the milk mixture, beating with the KitchenAid mixer until smooth.
- Heat the Nordic Ware waffle maker . I grease it with release spray because I find it very comfortable, but you can also do it with a little oil and a brush.
- Place the dough in the waffle maker and cook for two minutes on one side. After this time, turn it over and let it cook for two more minutes. Depending on the type of heat we use (gas, ceramic hob or induction), we will need a minute or so.
- Repeat with the remaining batter, lightly greasing the waffle maker as you make each batch of waffles.
- Serve with whipped cream or ice cream and of course with some of our peanut butter and a little chocolate syrup.
